Roasted Butternut Squash with Italian Sausage

While you're busy making and baking for friends and family, a light one pan meal might be nice.
Ingredients
- (2) Butternut Squash Roasted and Cubed
- (2 tbsp) Olive Oil
- (To Taste) Salt and Pepper
- (2) Chopped Medium Onion
- (1 lb) Crosswinds Italian Sausage
- (1 lb) Crosswinds Italian Sausage
- (3) Garlic Cloves Chopped
- (1 tbsp) Italian Seasoning
- (4 oz) Chopped Kale or Spinach
- (1/2 C) Dried Cranberries
- (2) Diced Apples
- (Drizzle) Honey or Maple Syrup
Directions
Directions:
1. In a large skillet, brown sausage, onion, Italian seasoning, and garlic.
2. Toss roasted squash with olive oil in a large bowl and add sausage mixture.
3. Add spinach or kale, apples, and cranberries.
4. Add everything to a large baking sheet
5. Bake at 350 for 20 minutes or until hot
6. Drizzle with local honey or maple syrup, serve hot.
