Crosswinds Pear & Almond Coffee Cake

Ingredients
- (3/4 C) Unsalted Butter (softened and divided)
- (1 Package (8oz)) Crosswinds Morning Glory Cheese
- (3/4 C) Granulated Sugar
- (2) Large Eggs
- (2 3/4 C) All-Purpose Flour
- (1 1/2 tsp) Baking Powder
- (1 tsp) Baking Soda
- (1/2 tsp) Salt
- (1/4 tsp) Ground Nutmeg
- (1/2 C) Crosswinds Whole Milk Yogurt
- (2 - OR canned pears) Sliced Pairs
- (1/4 C packed) Brown Sugar
- (1/4 C) Sliced Almonds
Directions
1. Preheat oven to 350. Spray 13x9 pan w/ baking spray
2. In a large bowl, beat ½ C butter and Morning Glory cheese until smooth. Add
granulated sugar, beating until creamy, stopping to scrape bowl. Add eggs 1 at a time,
beating well after each addition
3. In a medium bowl, whisk together 2 C flour, baking powder, baking soda, salt, and
nutmeg. With mixer on low speed, gradually add flour mixture to butter mixture,
beating until just combined; stir in Crosswinds yogurt. Spread ½ the batter in prepared
pan (it's thick). Layer pears on batter. Drop remaining batter by Tbsp onto pears.
4. In a small bowl, whisk together brown sugar and remaining ¾ C flour. Using a pastry
blender, cut in remaining ¼ C butter until crumbly; stir in almonds. Sprinkle on batter.
5. Bake until a wooden pick inserted in center comes out clean. 30-25 minutes. Cool for
30 minutes, serve warm.
